Eggless Strawberry Cheesecake French Toast - 2 Ways
30-35 MINS
INGREDIENTS
12 slices sandwich bread or loaf - 6 slices for roll up, 6 for the other (you can slice, thick or as small as you prefer)
Strawberry Filling:
6 Strawberries, Sliced/diced
½ teaspoon Lemon Juice
2 tablespoon Sugar
French Toast Mix:
Half cup milk
1 tablespoon custard powder
½ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon vanilla extract
1 teaspoon Butter
Cream Cheese Filling:
150g Cream Cheese
1 Teaspoon Lemon Juice
1/4 cup icing Sugar
1/4 Tsp Vanilla Bean Paste/Vanilla extract
DIRECTIONS

In three individual bowls mix up all the fillings and set aside
Roll each slice of bread flat with a rolling pin and then carefully cut off the crusts. For regular shaped french toast leave 6 slices of bread with crust on.
Put a small amount of cream cheese filling and a small amount of strawberry filling and roll. For regular french toast, fill one slice of bread with cream cheese filling and the other slice with strawberry and put them together pressing down lightly.
Dip each filled roll ups/slices into the french toast mixture, and pan fry in a buttered skillet until all sides are golden brown.
To take this to ginger your french toast up to a next level, you can make an easy strawberry sauce by cutting up 4 strawberries, add 2 tablespoons, sugar, mix and pop in the microwave for 2 minutes, make sure to keep an eye on it and mix after 1 minute.
OR
Melt some milk chocolate in the microwave and drizzle over it.
Add some whipped cream and left over strawberries or fruit of your choosing.
