Gooey bacon mac & cheesy - always with a twist

Mac and cheese has always got a place on my table and not as a side dish. I think we have figured out that pasta and I are inseparable. So here's to mac & cheese being a main you can enjoy. Heads up, don't blame me if you put on a few pounds after trying out this recipe because this is truly addictive. Here we go !

Ingredients

 
  • 500g spirali pasta

  • 4 tablespoon butter

  • 2 cups Red Leicester cheese (grated)

  • 2 cups Mature cheddar cheese (grated)

  • 1 1/2 cups Evaporated Milk or whole milk

  • 160g bacon lardons (you can also use pancetta)

  • Soft cheese

  • 1 small onion

  • 1 teaspoon smoked paprika

  • 2 teaspoon onion powder

  • 1 teaspoon garlic granules

  • 1 teaspoon white pepper

  • 1 tablespoon parsley

  • 1 teaspoon sugar

  • 2 teaspoon olive oil

 

Directions

  1. Bring a large amount of water to boil over high heat

  2. chop onion and set aside

  3. After the water has come to a boil, add in pasta and boil for 9 minutes, drain out the water and set aside

  4. Preheat oven to 200C

  5. Next, place a small frying pan on low-medium heat, add in the olive oil, once the oil is heated up add in the chopped onions and let this fry for about 2 minutes allowing the onions to turn soft and brown. After this add in the bacon lardons/pancetta and allow this to fry until brown while stirring periodically . Take it off heat and drain out any oil with a kitchen roll and set aside

  6. Place a medium/large sized pot on medium heat.

  7. Next, add in the milk, butter, seasonings, sugar, soft cheese and lastly the cheese, stir to incorporate all this and allow it to cook for 5-6 minutes or until the cheese is completely melted and you have a smooth consistency (stir occasionally).

  8. Add in the pasta and stir in well, allow this to cook for another 2 minutes.

9. Pour into an ovenproof pan or individual dishes, layering and adding cheese and the bacon-onion mix step by step, lastly add a layer of mixed cheese(leicester, mozzarella and cheddar) and parsley on top.


10. Place in the oven and bake for about 25 minutes until golden.
