Lets Tacoabout Tacos

What is today? Today is an awesome day, why? In the words of Lebron James, “IT'S TACO TUESDAY”. Babybaybay.

I had my first taco only 4 years ago. Say what girl. (shocked face emoji) I know right? Where the hell have I been? Under a rock? In one village somewhere in delta or maybe just a scaredy-cat who didn’t consider much food out of her comfort zone? I actually didn’t know what a taco was or looked like. Not until one of my friends cooked it for me, and I kid you not, I have never looked back.

Tacos have quickly become one of my favourite easy recipes to prepare, especially on days when I am feeling less experimental, packed with flavour, delicious, and ready in less than 30-35 minutes.


Now lets fix some Tacos ieeeeeeeieeeeeeeeeeeieeeeeee !!!!










 

INGREDIENTS (Taco meat)

  • 1 medium white onion/red

  • 750g beef mince

  • 1/4 teaspoon ground cinnamon

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

  • 1/4 teaspoon brown sugar

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon Mexican oregano

  • 1/2 teaspoon thyme

  • 2 tablespoons tomato paste

  • 2 bay leaves

  • 2 beef bouillon cubes

  • Pinch of salt

  • 1 teaspoon onion powder

  • 2 teaspoon chilli powder

  • 1 and half teaspoon of garlic ginger pimento seasoning (you can use either of these individually if you do not have this exact mix) This can also be bought at your local market.

  • 2 tablespoons, Olive oil for frying the mince

  • Store bought taco case of your choice. You can also make them by buying corn tortillas and frying it into a taco shape but who needs all that stress. Work smart, not hard people !!


TACO TOPPINGS

1 small red onion (diced)

1 huge tomato (diced)

Mixed cheese (Cheddar, Mozzarella & Red Leicester)

1 small avocado (diced)

1 bag of iceberg lettuce (chopped) you can also use shredded


SALSA

Half a can chopped tomatoes

Chopped diced onions add at the end

Cayenne pepper

Cinnamon

Hot chillI powder

White pepper

Onion powder

Ginger garlic pimento seasoning

Chives


SPICY MAYO

2 tablespoon Sweet chilli sauce

3 tablespoon, Mayo

2 squirts of Sriracha (if you use sriracha then skip the garlic powder)

1 and half tablespoons chilli powder

Lime juice

1 teaspoon Cajun seasoning

1 teaspoon garlic powder

1 teaspoon Smoked paprika

 

DIRECTIONS


DIRECTIONS

  1. Place mince into a sieve and rinse over cold water.

  2. In a medium sauté pan add in olive oil, then onions & cook until onions go slightly transparent at this point, adding in the mince. Allow to cook until meat turns light brown.

  3. Next, add in all the ingredients and stir. Cover and allow cooking for 3/5 minutes continuously stirring to avoid meat from burning. Once most of the water has evaporated, add in 1 cup of water, cover and allow cooking for about 10/15 mins or until all the water completely evaporates and set aside.

  4. In a small sauce pan, heat up 1 teaspoon of olive oil, then add in half a can of chopped tomatoes, let this simmer for about 4 mins, then add in all the ingredients listed in the salsa section. Stir and lit this simmer for 20mins, allowing the sauce to thicken.

  5. In a small bowl add in the mayonnaise, sriracha, sweet chilli with the other spices listed and combined until everything is mixed in properly. It should turn to a slightly reddish colour.

  6. Then, heat up the oven to 180C & place your taco shells inside for about 2-3 mins.

  7. Tacos are ready for stacking. Use a mixture of all the toppings depending on what you like.

Plate up & serve with a wedge of lime.
