Orange you glad I made - Orange Pepper Chicken Wings W/ Egg fried Rice
This simple Egg fried rice is something that I cook at least once a week.
This is an easy dish, where you can add or subtract what you like or don't like. It can be made with whatever vegetables you have in your fridge/freezer but preferably use fresh vegetables(Thank me later). This Egg fried rice went great with my Orange Pepper Chicken Wings

I am sure we've all heard of lemon pepper chicken, but how many of us knew that something such as orange pepper chicken also existed. If you knew this already and didn't let me know I am, so mad at you right now for not giving me the heads up. How could you keep this all to yourself? Not fair!
I simply wanted to find out what orange chicken tastes like, so I whipped myself up a batch. It was actually easy to make and was so delicious. All the flavours meshed so well together. It was literally heaven in my taste buds. This is a must-try recipe If you are a fan of Lemon Pepper Chicken Wings. Enjoy!
INGREDIENTS
Chicken
1 kg chicken wings
3/4 cup Orange Juice
1 cup Tango or Fanta Orange
1 tablespoon Orange zest
Orange Pepper Seasoning
1 knorr Chicken cube
2 teaspoon Hot & spicy seasoning
1 tablespoon Fish Sauce
1 teaspoon Garlic puree
2 teaspoon Ground Black Pepper
Egg Fried Rice
3 tablespoon cooking oil of your choice
1 cup diced onion (small)
4 eggs, beaten with a pinch of salt
3 cups cold jasmine rice (make this the day before you intend on making your fried rice) This ensures that there isn't too much moisture in the rice so that the fried rice does not end up being mushy and inedible.
2 tablespoon soy sauce
2 tablespoon Shaoxing wine
1 ½ teaspoon salt
4 spring onions, sliced
2 tablespoon Hoisin sauce
½ teaspoon butter
½ teaspoon five-spice powder
2 teaspoons toasted sesame oil
½ cup green peas
½ teaspoon garlic puree
½ teaspoon ginger puree
½ cup carrots cut into cubes/diced
DIRECTIONS
Wash chicken wings. I do this by soaking them in lemon and salt water for about 30 mins, then rinsing. (you can wash the chicken however you prefer)
Pour the orange juice and fanta/tango into a bowl and season with all the ingredients listed. Cover and put away for about 3/4 hours if you are making it on the same day. I recommend making this the night before with the rice as this allows the chicken to absorb all the seasonings.
Retain about ½ a cup of the seasoning mix in a separate container. This will be used in making the sauce
In a preheated oven, add in seasoned chicken wings into a lined baking tray and allow this to cook for about 15-20 mins. Make sure to check the chicken frequently and baste it in the marinade until the final 2-3 minutes in the oven,
In a wok on high heat add in ½ a teaspoon of butter and fry the egg mixture until the egg is completely scrambled and cooked. Remove the egg from the wok and set aside.
Add oil to the wok and fry the onions until they turn a little see through and add in ginger and garlic puree. Next, add in the carrots and peas and stir.
Add in rice, 5 spice seasoning, soy sauce, Shaoxing wine and hoisin sauce and stir until completely mixed in. Allow rice to fry while consistently stirring to prevent it from burning.
Drizzle in sesame oil
Turn off heat, add in sliced spring onions and stir in one more time.
To make the orange pepper sauce place a small pan on medium heat and add in the orange mixture you retained earlier. Allow this to boil on low heat for about 5 minutes. Stir continuously until sauce thickens.
Serve rice with wings and sauce !
